I plan to eat this for days because of how good it is. It might look like a pain due to the waiting and simmering time but I barely noticed it.

Paella

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “One Pot”. I have never cooked with mussels before but have always really liked theme so I thought this would be a perfect time. Also, my friend made paella recently and it looked really good and I wanted to try my hand at it.

Green Chicken Masala

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “fat” and my second theme was “inspired by a colour”. Obviously the colour I chose was green. I have made masala before but never green masala so I was very intrigued. This came out really well and made my entire place smell really good. If you want a hotter or milder dish, you can adjust the amount of peppers to see fit. The way this recipe was written, comes out fairly hot but I some times like my meals to fight back some times.

Chili Rice

This dish was prepare for the subreddit, /r/52weeksofcooking, where the theme was “Outdoorsman” and my second theme was “Rice”. My friend group and I go camping a lot during the summer but I do not think we have ever cooked rice while camping, usually just steaks, hot dogs, and burgers. Since it is still a little too cold to go camping, I cooked this in my kitchen but have modified the recipe.

One Pot Brazilian Chicken and Rice

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was Brazilian and my second theme was one pot. I have a love and hate relationship with one pot recipes. I love the fact that clean up is super easy but I do not like the fact that it is way to easy to over or under cook a part of dish. Then throw chicken in the mix and I was legitimately worried. A worry that quickly faded as soon as I started to eat this. The rice was cooked perfectly and the chicken was very moist. I could see myself making this again since I usually have most of the ingredients on hand and it was pretty easy. Next time, I think I will add a bit hot spice though.
