Spicy Smoked Bourbon BBQ Sauce

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Smoking”. I am definitely a fan of a good smoked meat or something similar but where I live does not allow for charcoal or smokers so I decided to play around with some liquid smoke. This BBQ sauce ended up turning out really good with a good ration of smokiness, bourbon, and a little bit of heat that lingers a little after you ate it. Given how easy this is to make, I do not see a reason to buy BBQ sauce ever again.

Sausage & Tortellini Soup

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Stocks and Broths”. A good broth or stock is absolutely delicious and I love making them but so far this year, I think I have made 5 or 6 different broths so I decided to go with a different route for this and just use a broth I have in my freezer. I am very glad I did this because we currently have a snow storm at my house and this soup was absolutely perfect. Also, I was about to go to my favourite pasta market to get some fresh pasta to go with this. Even better yet, this tasted even better the next day though the tortellini absorbed much of the liquid which is easily fixable.

Corn Dogs

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Handheld Foods”. When I saw this theme, I did not even question it, my mind went back to highschool and college and eating a bunch of those terrible frozen corn dogs. Also, I decided on corn dogs because they are one of my guilty pleasures and I realised that I have never made them. These were absolutely delicious and reminded me of faires and carnivals. These are definitely on list of exceptions to not liking deep fried food.

Stuffed Jalapenos

I definitely dreaded this theme since my plating is kind of crap so I decided to make something simple and tried to make it prettier. Enter these Jalapenos stage right. These can go well as a side dish or if you are like me, just scarf them down for no damn reason.

Sloppy Joes

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Cafeteria Food”. As soon as I read this theme, I immediately thought of those really terrible sloppy joes from primary school which I am sure was just some sort of meat and ketchup. Well I decided to make it better and was very successful. Maybe it had a slight nostalgic effect but either way my SO and I devoured this.

Blackened Catfish

This dish was part of a meal that was created for the subreddit, /r/52weeksofcooking, where the theme was “Southern”. I have a few friends from the South and I have been there a couple times so I had a few different options for dishes. The hard part was trying to make something that I have never had before. Then I realised that I have never had blackened catfish even though I have seen it on a bunch of menus. How could I not like this? Catfish and Cajun spices? Sign me up!

Kimchi Ramen

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Dorm Food”. I never stayed in a dorm but I did eat cheaply during college. The one dish that stood out was top ramen with an egg. I decided to recreate this but with a dish that I actually want to eat and I love ramen.
