This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Stocks and Broths”. A good broth or stock is absolutely delicious and I love making them but so far this year, I think I have made 5 or 6 different broths so I decided to go with a different route for this and just use a broth I have in my freezer. I am very glad I did this because we currently have a snow storm at my house and this soup was absolutely perfect. Also, I was about to go to my favourite pasta market to get some fresh pasta to go with this. Even better yet, this tasted even better the next day though the tortellini absorbed much of the liquid which is easily fixable.

The theme for this week is way too large because there are so many things that can be classified as casseroles. My favourite being lasagna but I have made that way too many times so I decided to go more of classic that did not use cream of anything soup. This was definitely a good option due to how delicious it was. Also, with the colder weather coming in, I was craving comfort food.
I do have to say though, this is more filling than it looks and my eyes were much bigger than my stomach. But left overs for days!

There is this Italian restaurant near my parent’s house that I visit at least once or twice a year and someone at the table almost always orders this. Does it taste better? Probably but the flavours are very different. Given that, this is really damn good and I plan on making this many many times.
