Sausage & Tortellini Soup

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Stocks and Broths”. A good broth or stock is absolutely delicious and I love making them but so far this year, I think I have made 5 or 6 different broths so I decided to go with a different route for this and just use a broth I have in my freezer. I am very glad I did this because we currently have a snow storm at my house and this soup was absolutely perfect. Also, I was about to go to my favourite pasta market to get some fresh pasta to go with this. Even better yet, this tasted even better the next day though the tortellini absorbed much of the liquid which is easily fixable.

Bison & Mushroom Country Casserole

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Casseroles”. The theme for this week is way too large because there are so many things that can be classified as casseroles. My favourite being lasagna but I have made that way too many times so I decided to go more of classic that did not use cream of anything soup. This was definitely a good option due to how delicious it was. Also, with the colder weather coming in, I was craving comfort food.

I do have to say though, this is more filling than it looks and my eyes were much bigger than my stomach. But left overs for days!

Baked Mostaccioli

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Vacation Food”. There is this Italian restaurant near my parent’s house that I visit at least once or twice a year and someone at the table almost always orders this. Does it taste better? Probably but the flavours are very different. Given that, this is really damn good and I plan on making this many many times.

Spicy Mexican Minestrone Stew

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Italian”. Since I cook Italian food all of the time, I decided to  change things up and try kind of a Mexican-Italian fusion meal. Well, it turned out really good and there are only a few things that I would change.

Cajun Chicken Pasta

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Cajun” and my second theme was “turn something boring into something great”. Mixing these two themes was fairly easy. I took a normal chicken pasta and let the chicken marinate for a short time in some cajun spice and the result was a mildly hot, easy, pasta dish that I would definitely make again. I think next time I might use a bit less noodles and break them up to make it easy to get all of the veggies, chicken, and pasta into one bite. Also, I would reserve some of the starchy water to help break apart the noodles.

Chicken with Orzo

Since my last dish was more of a lunch thing, actually it was only a lunch thing and I have been eating it all week, I decided that I should probably eat dinner. But I was also feeling too lazy to go shopping for food and decided to try and cook something from what I had in my house already. Man I am glad that I did, this was incredibly easy and yet, still bursting with flavour. Continue reading “Chicken with Orzo”

Chicken Enchilada Mac and Cheese

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “Mac and Cheese” and my second theme was “Cheese”… well that’s easy to combine. But I have made Mac and Cheese many times before so I decided to change it a little bit. Enchilada sauce, pasta, and cheese. This has all the makings to be delicious… and too be honest, it was pretty damn good. Not the best Mac and Cheese I have had but definitely a nice change.
