California Burrito

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “California Cuisine”. I grew up in California so when I saw this theme, I got a little nostalgic. Just the other week I was talking about how much I miss California burritos. I mean beans and rice are good and all but some times I want fries in my burrito. This definitely cured my craving for one and I am glad that I have enough to make a few more.

Asian Marinated Steak Fajitas

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “rice”. Obviously, you can see no rice in the faijitas but I will probably make another post for those. I have made fajitas in the passed but never asian marinated and I can honestly say that this will be my new go to whenever I want to make Fajitas. The difference in flavour is not huge but it is very subtle and very welcomed without too overbearing. I think next time, I might add a different spice or sauce to go with it. Also, I would go with fresh ginger next time for more ginger flavour.

Chicken Mole

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “From A Can” and my second theme was “Coffee”. While I have made mole before, last time I definitely did not use coffee. Since the last time I made it was so long ago, I really cannot say which way tasted better. I think I like them both! This was really good and next time there are very few changes I would make like making the Mole a little hotter. The only reason I did not this time is because I am always hesitant about adding too much heat to recipes when serving food to other people. I should have known better. Thought for next time though! I also had to stop myself from eating the pepitas before cooking… I have a problem.

Blackened Tilapia Tacos with Mango Avocado Salsa

The salsa part of this dish was created for the subreddit, /r/52weeksofcooking, where the theme was “raw”. But after you make a large bowl, you are overcome with the horribly great problem of deciding on a vessel to shovel the salsa in your mouth. I chose tacos…. and chips… obviously. The taco meat and the salsa were both really good and bursting with flavours but together… the were to die for. Maybe not die for but probably kill for. Definitely making these again.

Dry-Rubbed Salmon Tacos

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “coffee”. Immediately I thought of dessert because I love coffee flavoured dessert and then I thought it would give an earthy taste to a dry rub. It might not have an earthy flavour but it is definitely delicious. Maybe I just like Salmon?

Enchilada Lasagna

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “Alton Brown”. I am just going to start by saying I love Alton Brown ever since I first saw Good Eats though some of his newer stuff is not that great. It was not difficult to use one of his recipes, it was more difficult to find one that I have not made before. Then I saw this and I was hooked… how could this be bad, tortillas, sauce, and cheese? I will definitely make this again but I think it needed more heat to it. Next time!
