Pork & Shrimp Pancit

Honestly, I was not sure what to expect for this theme since the only Filipino food I knew of was Adobo and I have definitely made that before. Then I stumbled upon a few different pancit recipes and got really excited. This did not disappoint but I might have accidentally made way too much and have been eating it for days. No regrets, I could eat this forever and I am not even that big of a pork fan.

Stir Fry Bowls with Spicy Peanut Sauce

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Spicy”. Kind of a boring theme because I am a spice head and most of my dishes have some sort of heat but I was really craving peanut sauce and I needed to use up some of the peanut butter I made so I stop eating it with a spoon. These bowls were really good and a good way to raid my freezer for chicken and pork that I have been meaning to use. Just looking at it makes me want to eat it again. Also, I hate chopping up peanuts when my food processor is in use. Can you tell?

Slow Cooked Peach Pork Chops

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Inspired by Music”. For the theme I definitely was inspired by the song Peaches by The Presidents of the United States of America or the band, Peaches, but either way Peaches. I have never really been a fan of pork chops. I have had them when they were just alright and times where they were down right terrible. This was not the case, these were delicious. I do not think I will go back to cooking pork chops any other way. You just have to be careful taking them out of your slow cooker.

Spicy Italian Pinwheels

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Deli Foods”. This theme is kind of vague on the amount of things that I can make but I am a sucker for anything wrapped in a tortilla so it was pretty much an easy choice. That being said, these were really good and I have been eating these for a week.

Baked Mostaccioli

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Vacation Food”. There is this Italian restaurant near my parent’s house that I visit at least once or twice a year and someone at the table almost always orders this. Does it taste better? Probably but the flavours are very different. Given that, this is really damn good and I plan on making this many many times.

Bierocks

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Pie”. I am assuming that they picked this theme because of Pi day which is the best day mostly because I am a big math geek. Does not matter what the reason was, I decided I that I did not want to make a sweet pie because I wanted dinner and I did not want to do a normal pot pie because that can be boring. Then I saw these and I had to have them. I was very pleased with the outcome and I am very happy that these freeze well because I plan to eat the hell out of them!

Paella
