Avocados are one of my favourite fruits and I have made many dishes with it so I had to dig deep into my brain parts to think of something to make. Then I saw this recipe and I was glad I did because of how easy and delicious it was. Ceviche is one of those dishes that I love, not really difficult to make, and yet I very rarely have it. To be the fact that food can be cooked in citric acid is so interesting. That and yeast, I cannot wrap my mind around yeast. Confession time, I might have bought martini glasses just for this dish. I have been making more drinks lately so they will go to good use though. Just more excuses for martinis.

The theme for this week is way too large because there are so many things that can be classified as casseroles. My favourite being lasagna but I have made that way too many times so I decided to go more of classic that did not use cream of anything soup. This was definitely a good option due to how delicious it was. Also, with the colder weather coming in, I was craving comfort food.
I do have to say though, this is more filling than it looks and my eyes were much bigger than my stomach. But left overs for days!

I am going to be honest, the first time I had a Bibimbap was just because I had no idea what it was and I wanted to say it out loud. Damn was I glad I did. This is definitely one of my favourite dishes because you get such different flavours in each bite. That being said, this was much easier to make than I would have thought and I got to try to use my Sous Vide to try and make a soft poached egg!
This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Tailgate”. I used to go to tailgates all of the time until they got banned in my city for a few reasons. That being said, it has not stopped me from enjoying some delicious tailgating food.
It is really hard to screw up a meatball sub. Make meat balls add stuff. These were no different but I do have to say that they were much better after sitting in the sauce all night and the pictures were a bit better. Wish I took pictures before devouring it again.

Not for any health reason, even though that is a good one, but more because I have never been a huge fan of deep fried food. These fish tacos might have changed my mind. Not only was the whole taco delicious, the cod had an amazing flavour.

As soon as I read this theme, I immediately thought of those really terrible sloppy joes from primary school which I am sure was just some sort of meat and ketchup. Well I decided to make it better and was very successful. Maybe it had a slight nostalgic effect but either way my SO and I devoured this.

There is this Italian restaurant near my parent’s house that I visit at least once or twice a year and someone at the table almost always orders this. Does it taste better? Probably but the flavours are very different. Given that, this is really damn good and I plan on making this many many times.
