Mexican Meatball Subs

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Tailgate”. I used to go to tailgates all of the time until they got banned in my city for a few reasons. That being said, it has not stopped me from enjoying some delicious tailgating food.

It is really hard to screw up a meatball sub. Make meat balls add stuff. These were no different but I do have to say that they were much better after sitting in the sauce all night and the pictures were a bit better. Wish I took pictures before devouring it again.

Sloppy Joes

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Cafeteria Food”.¬†As soon as I read this theme, I immediately thought of those really terrible sloppy joes from primary school which I am sure was just some sort of meat and ketchup. Well I decided to make it better and was very successful. Maybe it had a slight nostalgic effect but either way my SO and I devoured this.

I have to be honest, I have never even thought of Portuguese food but my local fish market had a sale on some Halbut so I had to make this. While the timing was off due to the heat outside, I would totally make this again on a cool day.

Soft Pretzel Bites and Cheese Sauce

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “concession food”. Give me any excuse to dip something in cheese and I will happily do it. Then definitely did the trick. It was soft, good, salty, and cheesy. Everything that is good in this world. I was definitely surprised on how soft the insides of the pretzels came out.

I was glad that I was able to use what I learned during the molecular themed week and I do not think I will ever make mac & cheese any other way. The addition of the bread crumbs and baking this makes this even better.

Pan Fried Fish With a Lemon Butter Sauce Over Rice

I have made a number of pan sauces in the past without second thought so when this theme came up, I really had to think. This was so damn delicious and decadent, I will definitely be making this again. A** BloodA** Blood is a homemade hot chili powder that I make.
