I am just going to start to say that Thai food is one of my favourite cuisines, so much so that I constantly try to recreate it. Thus, why I had issue with this theme was trying to come up with something I have never attempted before. Then I remembered this small Thai place near my old work that made killer Pad Kee Mao. This dish also gave me a chance to try out my new wok that I have been meaning to break in.

Caprese Chicken with Bacon

This dish is the first part of a dish prepared for the subreddit, /r/52weeksofcooking, where the theme was “Bacon”. While It gets kind of annoying that lately everything is covered or wrapped in bacon, I decided to make something that I have never made before. Plus I love caprese salad. Bacon, Meat, and cheese, you be the judge on how horrible this could go. Times up! Delicious. Even for chicken.

Kangaroo, Italian Sausage, and Beef Pasta Bolognese

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “ground meat”. When I first saw the theme, I felt it was fairly boring but then I remembered I have always wanted to try and make bolognese. I am glad I did because this was amazing. It almost made me forget that I was cooking for 5 hours… almost. I will definitely be making this again but probably for a special occasion.

Grilled Shrimp

Feta & Bacon Stuffed Chicken with Orzo with Parmesan & Basil

This dish was was prepared for the subreddit, /r/52weeksofcooking, where the theme was “herbs”. This theme was a little vague because most food has some sort of herb in it. While I am not the biggest fan of chicken (especially chicken breast), I am a huge fan of feta and I was not disappointed. This was juicy and delicious and the orzo was absolutely amazing.

Panang Curry with Beef

This dish is was prepared for the subreddit, /r/52weeksofcooking, where the theme was “spicy food”. I am just going to start out this post by saying that when my friends and I saw this theme, we laughed. Almost all of our food is spicy… case in point: https://boredoftheinternet.wordpress.com/2014/10/10/a-blood-recipe/. Also, this dish is probably my favourite Thai dish. I remember my mom ordering this at my first Thai restaurant when I was about 8 and feel in love then and never stopped. Because of this, I have never tried making it because I thought it was overly complicated and I was very wrong. That being said, this dish had a decent amount heat but it could have used more. The only reason I did not make it hotter is out of respect for a friend who was over when I made this that can not take heat like a few of us. Given that, the left overs, I cheated and added a thing of chili paste that I got from a Thai restaurant that I went to a week prior.
