Avocado Shrimp Ceviche-Estillo Sarita

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Avocado”. Avocados are one of my favourite fruits and I have made many dishes with it so I had to dig deep into my brain parts to think of something to make. Then I saw this recipe and I was glad I did because of how easy and delicious it was. Ceviche is one of those dishes that I love, not really difficult to make, and yet I very rarely have it. To be the fact that food can be cooked in citric acid is so interesting. That and yeast, I cannot wrap my mind around yeast. Confession time, I might have bought martini glasses just for this dish. I have been making more drinks lately so they will go to good use though. Just more excuses for martinis.

Cedar-Planked Salmon

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Fad Food”. Cedar-planked salmon has been around forever so it is not necessarily a fad food so I was going to go for a low carb dish. I have had cedar-planked salmon before but never made it myself and after making it, I cannot imagine why. It is so easy to do and it makes it absolutely delicious. It does take some time but the majority of the time is just waiting for the salmon to cure and marinate.

Slow Cooker Spiked Cranberry Apple Cider

This drink was created for the subreddit, /r/52weeksofcooking, where the theme was “Meal Prep”. This drink was only part of the meal created for this theme but it was so good that I wanted to share it. The weather is starting to get cold around here so this drink was a nice way to warm up. The only problem is that is does mask the alcohol a little too well so it is easy for it to sneak up on you.

Corn Dogs

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Handheld Foods”. When I saw this theme, I did not even question it, my mind went back to highschool and college and eating a bunch of those terrible frozen corn dogs. Also, I decided on corn dogs because they are one of my guilty pleasures and I realised that I have never made them. These were absolutely delicious and reminded me of faires and carnivals. These are definitely on list of exceptions to not liking deep fried food.

Bison & Mushroom Country Casserole

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Casseroles”. The theme for this week is way too large because there are so many things that can be classified as casseroles. My favourite being lasagna but I have made that way too many times so I decided to go more of classic that did not use cream of anything soup. This was definitely a good option due to how delicious it was. Also, with the colder weather coming in, I was craving comfort food.

I do have to say though, this is more filling than it looks and my eyes were much bigger than my stomach. But left overs for days!

Spicy Italian Pinwheels

This theme is kind of vague on the amount of things that I can make but I am a sucker for anything wrapped in a tortilla so it was pretty much an easy choice. That being said, these were really good and I have been eating these for a week.

Bibimbap

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Korean”. I am going to be honest, the first time I had a Bibimbap was just because I had no idea what it was and I wanted to say it out loud. Damn was I glad I did. This is definitely one of my favourite dishes because you get such different flavours in each bite. That being said, this was much easier to make than I would have thought and I got to try to use my Sous Vide to try and make a soft poached egg!
