St. Louis Style Spicy BBQ Chicken Drumsticks with Blue Cheese

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “American Midwest”. While I usually do not go for chicken when cooking, I have always had a soft spot for wings, drumsticks, and thighs. Also, the fact that these were cooked “St. Louis” style intrigued me because I want to go to St. Louis just for the food. Hell, I have traveled for worse reasons before.

Chicken Enchilada Stuffed Spaghetti Squash

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “5 Ingredients or Less”. I kind of cheated and did not count the salt and pepper because most food has salt and pepper in it. Normally, I do not like “healthier” substitutions but this was really delicious. I’m not sure if this is better than normal chicken enchiladas but I am glad I made this.

Paella

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “One Pot”. I have never cooked with mussels before but have always really liked theme so I thought this would be a perfect time. Also, my friend made paella recently and it looked really good and I wanted to try my hand at it.

Chicken Enchilada Quinoa

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “tex-mex”. Well I was trying to do something that I have not made before and I really like quinoa. While this is definitely not an enchilada but more of a quinoa casserole, I still really liked it so I do not care.

Chicken Tikka Masala Ravioli

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “screw ups”. Well I still do not own a pasta maker or ravioli stamp so I attempted to make it using just a rolling pin. I think I finally got it! The trick is to make sure you cover everything in your house in flour! That being said, these were absolutely delicious. I would make these any day and honestly, were not too hard. Plus, I made enough to freeze that I do not have to make it that often.

Next time, I definitely will make it a bit more spicy though. I ended up running out of Flour so I substituted whole wheat flour and it turned out fine. Also, you can make the Chicken Tikka, Paneer, Cilantro Mint Chutney, Ginger Garlic Paste, and Curry Powder before time.

Curried Pumpkin, Red Lentil, and Chicken Soup

There was supposed to be this big storm coming in over the weekend so I immediately thought about movies, video games, soup, and Gluehwein. Well the storm was less than impressive but dammit I wanted some mulled wine, a Pabst onesie, and soup. I also, wanted this to be filling enough to take to work for lunches. This soup was just the thing, spicy, filling, and delicious. Continue reading “Curried Pumpkin, Red Lentil, and Chicken Soup”

Cajun Chicken Pasta

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Cajun” and my second theme was “turn something boring into something great”. Mixing these two themes was fairly easy. I took a normal chicken pasta and let the chicken marinate for a short time in some cajun spice and the result was a mildly hot, easy, pasta dish that I would definitely make again. I think next time I might use a bit less noodles and break them up to make it easy to get all of the veggies, chicken, and pasta into one bite. Also, I would reserve some of the starchy water to help break apart the noodles.
