California Burrito

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “California Cuisine”. I grew up in California so when I saw this theme, I got a little nostalgic. Just the other week I was talking about how much I miss California burritos. I mean beans and rice are good and all but some times I want fries in my burrito. This definitely cured my craving for one and I am glad that I have enough to make a few more.

Slow Cooker Beef Ragu

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “spice blends”. So I decided to make my own Italian Seasoning from Basil, Marjoram, Oregano, Rosemary, Thyme, and Garlic Powder. You can use store bought Italian Seasoning or play with the spices a bit.

Choco-BBQ Chili

This dish was the completed part of a dish created for the subreddit, /r/52weeksofcooking, where the theme was “Bottled Sauces from Scratch” and my second theme was “Comfort Food”. While the homemade BBQ sauce satisfied the first theme, this completed dish definitely was comfort food. Chili Rice

This dish was prepare for the subreddit, /r/52weeksofcooking, where the theme was “Outdoorsman” and my second theme was “Rice”. My friend group and I go camping a lot during the summer but I do not think we have ever cooked rice while camping, usually just steaks, hot dogs, and burgers. Since it is still a little too cold to go camping, I cooked this in my kitchen but have modified the recipe.

Kotleti with Mushrooms in a Sour Cream Sauce

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “breads” and my second theme was “Russian”. While this really does not look like bread, I ended up using different bread types that I figured it was fine. Also, I might have made these a little large that they ended up turning out more like mini burgers, almost slider like, instead of cutlets. Oh well, give me meat in my stomach. Ricotta Pancakes

This morning I woke up and could not think of what to make for breakfast and realised that I pretty much only had ingredients for pancakes. Then I remembered that I still had some ricotta from the meatballs I made last week. I’ve put different things in pancakes (I love pancakes) but never ricotta. That being said, whenever I buy ricotta, I will always buy extra to save for pancakes. These were delicious! The ricotta does not really give them a cheesy flavour but rather more of a creamy texture. They were very fluffy and the inside basically just melted in your mouth.

Breakfast Pizza

I asked my girlfriend what she wanted me to make for breakfast and she told me she was craving Pizza. Now, I don’t think she was answering my question but I went with it anyway and I am glad I did. This was a perfect morning dish but it could be just that I want pizza all the damn time. The egg was the only ingredient that I was worried about but it definitely went well with the whole dish.
