Red Beans and Rice

This dish was part of a meal that was created for the subreddit, /r/52weeksofcooking, where the theme was “Southern”. I am just going to start that this makes a lot but I am 100% ok with that. I plan to eat this for days because of how good it is. It might look like a pain due to the waiting and simmering time but I barely noticed it.

Blackened Catfish

This dish was part of a meal that was created for the subreddit, /r/52weeksofcooking, where the theme was “Southern”. I have a few friends from the South and I have been there a couple times so I had a few different options for dishes. The hard part was trying to make something that I have never had before. Cajun Chicken Pasta

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Cajun” and my second theme was “turn something boring into something great”. Mixing these two themes was fairly easy. Also, I would reserve some of the starchy water to help break apart the noodles.

Cajun Shrimp Salad Jar

This dish was created for the subreddt, /r/52weeksofcooking, where the theme was “brown bag lunch” and my second theme was “salad”. Yes, I know this is not a brown bag but I did not have any so my Doctor Who lunch box will have to do! This meal was so easy to create and it goes well, warm or cold. This morning, it was a nice change to just grab one of these jars and when I ate lunch, just give it a good shake and pop the top and dig in. If you do not want to eat out of the jar, you could easily just dump it out into a bowl or plate.

Jambalaya

I have been told many times that this is not authentic Jambalaya by my friends from New Orleans. You know what I say? I could care less, this is delicious and easy. A** Blood is a homemade hot chili powder/
