Avocados are one of my favourite fruits and I have made many dishes with it so I had to dig deep into my brain parts to think of something to make. Then I saw this recipe and I was glad I did because of how easy and delicious it was. Ceviche is one of those dishes that I love, not really difficult to make, and yet I very rarely have it. To be the fact that food can be cooked in citric acid is so interesting. That and yeast, I cannot wrap my mind around yeast. Confession time, I might have bought martini glasses just for this dish. I have been making more drinks lately so they will go to good use though. Just more excuses for martinis.

Spicy Italian Pinwheels

This theme is kind of vague on the amount of things that I can make but I am a sucker for anything wrapped in a tortilla so it was pretty much an easy choice. Moroccan Lentil Stew

I saw this stew on another website a while back and I had to try it… I did not anticipate non-stew like weather. Oh well, I bought the ingredients so I had to make it. Also, I am very glad I did. This was absolutely bursting with flavour. When I was making it, I was thinking of adding shredded chicken or something similar but it does not need it at all. I can still taste it on my tongue. This is definitely going into my soup/stew arsenal.

Sandwich Sushi

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “foods in disguise” for April Fool’s Day; my second thing was sandwiches so this was a pretty easy choice. To this day, I am really horrible at rolling sushi; real sushi or just sandwich sushi. The taste is good but it is just ugly. Chicken and Gnocchi Soup

I was not really planning on making this dish because I have been making a lot of soup, stew, and chili recipes lately. Then I thought how much I really love homemade gnocchis. Every time I make Gnocchis, I somehow forget how much of a pain in the ass they are. Probably because while I am eating them, I am so overjoyed with how they taste. Normally, I make them like I would a normal pasta and just dump sauce on them so I wanted to try something different and I had most of the ingredients already. While the soup was really good, the next day was even better!

Avgolemeno

The amount of lemon juice is this soup definitely worried me but the end result was definitely delicious and it was a lot more hearty than I was expecting. The great thing about making your own broth is that you can adjust the amount of salt that goes into it. Plus, I am currently using the bones and gizzards to make another batch of broth

Egg Drop Soup

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “soup” and my extra theme had to have “eggs” in it. This was kind of a no brainer because I have been craving chinese food lately and I have not had a chance to indulge just yet. While this was pretty delicious, it was very basic so the next time I make it, definitely will add a protein like tofu and more chives or green onions.

Soft Pretzel Bites and Cheese Sauce

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was “concession food”. Give me any excuse to dip something in cheese and I will happily do it. Then definitely did the trick. It was soft, good, salty, and cheesy. Everything that is good in this world. I was definitely surprised on how soft the insides of the pretzels came out.
