Bison & Mushroom Country Casserole

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Casseroles”. The theme for this week is way too large because there are so many things that can be classified as casseroles. My favourite being lasagna but I have made that way too many times so I decided to go more of classic that did not use cream of anything soup. This was definitely a good option due to how delicious it was. Also, with the colder weather coming in, I was craving comfort food.

I do have to say though, this is more filling than it looks and my eyes were much bigger than my stomach. But left overs for days!

St. Louis Style Spicy BBQ Chicken Drumsticks with Blue Cheese

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “American Midwest”. While I usually do not go for chicken when cooking, I have always had a soft spot for wings, drumsticks, and thighs. Also, the fact that these were cooked “St. Louis” style intrigued me because I want to go to St. Louis just for the food. Hell, I have traveled for worse reasons before.

California Burrito

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “California Cuisine”. I grew up in California so when I saw this theme, I got a little nostalgic. Just the other week I was talking about how much I miss California burritos. I mean beans and rice are good and all but some times I want fries in my burrito. This definitely cured my craving for one and I am glad that I have enough to make a few more.

Stuffed Jalapenos

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Presentation”. I definitely dreaded this theme since my plating is kind of crap so I decided to make something simple and tried to make it prettier. Enter these Jalapenos stage right. These can go well as a side dish or if you are like me, just scarf them down for no damn reason.

Sloppy Joes

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “Cafeteria Food”. As soon as I read this theme, I immediately thought of those really terrible sloppy joes from primary school which I am sure was just some sort of meat and ketchup. Well I decided to make it better and was very successful. Maybe it had a slight nostalgic effect but either way my SO and I devoured this.

Manhattan Clam Chowder

This dish was created for the subreddit, /r/52weeksofcooking, where the theme was “chowder”. The first thing I thought of was clam chowder because I love it but then I realised that I have never even eaten Manhattan Clam Chowder. After looking online, I found that most people either love or hate it and there was very little in between. I decided to give it a shot since looking at the ingredients, it seemed like it would taste really good.

Juicy Lucy with Whiskey Grilled Onions

When I woke up today, the weather was abnormally warm so I decided to go for a hike. Whenever I go out in the sun or go hiking, I always get an appetite for a burger even though I am not really a burger fan. Add the fact that I picked up a bunch of ground bison the other day because I have never cooked with it and I was intrigued. This was really good that even a non-burger person like myself would definitely go back for. And incredibly juicy so much that it reminded me of those Carl’s Jr. commercials. I will definitely be looking into making different things with bison after this.
