Rustic Italian Sausage Tortellini Soup

Ingredients

12 oz Hot Italian Sausage (about 3 links, casing removed)
1 Onion , chopped
Clove , 7 Garlic minced
2 Cups Chicken Broth
1 1/2 Cups Water
1 14 1/2 oz Diced Tomatoes , undrained Cans
1 9 oz Tortellini Packages
oz   6 Baby Spinach , chopped
3/4 teaspoon Dried Basil
to taste Pepper
to taste Red Pepper Flakes
to taste Shredded Parmesan Cheese

Steps

  1. Crumble the sausage and add it to a dutch oven with the onion. Cook and stir over medium heat until the sausage is browned (about 7 mins).
  2. Add the garlic and cook an additional 1 minute.
  3. Stir in the broth, water, and tomatoes. Cover and bring to a boil (about 5 minutes).
  4. Add the tortellini. Cook for 7-9 minutes or until tender.
  5. Reduce the heat to low, add the spinach, basil, pepper (I used about 5 cranks), and red pepper flakes (I used about 1/2 teaspoon). Cook an additional 2 – 3 minutes or until the spinach is wilted.
  6. Top with cheese and serve.

This would be great with some flaky bread to go with to soak up the soup.
