Ingredients

1 Chicken Carcass (with or without giblets)
Celery Scraps
Carrot Scraps
Parsley Stems
Onion Skins and Scraps
2 Bay Leaves
12 Cups Water

Steps

  1. Add everything to a crock pot and cook on low for a minimum of 8 hours.

This dish is very versatile and very easy to experiment with. You can add any sort of vegetable scraps but make sure they taste good when cooked together. The chicken carcass can come from anywhere like a store bot rotisserie or cooked your own, the idea is to use something that you would normally throw away. Also, this will have far less salt than store bought so if using in a recipe, you might have to add salt. I typically cook it for as long as I can to get all of the flavour out of the bones.
